Eating primal is the way to go for me. I believe it is super simple, very easy, extremely nutritious and it gives me loads energy. Sometimes however, we get into a rut and start eating the same things that we enjoy day after day and it tends to get quite boring. Today I want to introduce to you a totally primal and healthy snack to add to your repertoire. Egg muffins, yes I said egg muffins and not Egg McMuffins. Egg muffins are a great snack or starter breakfast for someone on the go. You can load them up with whatever nutritious vegetables, meats and seasonings you like. Here is what you need
1/4 pound of cooked ground meet, sausage, or bacon
Finely chopped vegetables such as; mushrooms, red peppers, green peppers, onions, or whatever else you fancy
1/4 grated cheese (optional)
Salt and Pepper
Optional: Red pepper seasoning, tobasco sauce, or salsa
Preheat oven to 350 degrees
Generously grease the muffin tins with either butter or coconut oil.
Beat the eggs, meat, vegetables, cheese and seasonings in a bowl.
Spoon into the muffin tins.
Bake 20 minutes or until a toothpick stuck in comes out clean.
Eat and enjoy. A very nutritious healthy primal snack in the morning. Put them in a zip lock bag or tupperware container to eat throughout the week. Just pop them in the microwave for about 30 seconds and you are good to go.
